Baked Oatmeal Chocolate Chip Muffins

These Baked Oatmeal Chocolate Chip Muffins are super EASY to make. Filled with oats, Bananas, almond milk, flax seeds, and chocolate chips. They are soft, fluffy, healthy, vegan, naturally sweetened, gluten-free and oil free. These muffins are great for breakfast, snack or for lunchbox.

Baked Oatmeal Chocolate Chip Muffins are one of my favorite recipes. I have been making these from a while now and it’s so easy quick and versatile. I always keep experimenting by adding berries, apples, chocolates.

If you guys know me or follow me on my Instagram you already know how much I love to have oats in breakfast. I can have oats in any form like an Oatmeal Bowl, Banana Walnut Bread, Nuts and seeds Granola or Chocolate Peanut Butter Granola, etc. The main ingredients of all these recipes are OATS or OATS FLOUR.

Baked Oatmeal Chocolate Chip Muffins

As I mentioned before this recipe is 100% –

These Healthy Baked Oatmeal Chocolate Chip Muffins are so easy to make, it requires only 30 minutes. All you need is one mixing bowl. First, mix all the wet ingredients and then add all the dry ingredients as directed in the same mixing bowl mix well. Add some chocolate chips then divide the batter into muffins cups. Bake them for around 20-25mins and here you go…. Your muffins are ready to dig upon.

Also, the good thing is these muffins are easy can be stored in an airtight container in the refrigerator for up to a week or in the deep freezer for up to 1 month.

Ingredients:-

 2 Ripped Mashed Bananas
 1 tsp Vanilla Extract
 ½ cup Maple Syrup
 ½ cup Unsweetened Soy Milk
 2 ½ cups Rolled Oats (Gluten free)
 ½ cup Oats Flour
 ½ tsp Cinnamon
 1 tsp Baking Powder
 ½ tsp Baking Soda
 1 tbsp Ground Flax Seed
 ½ cup Chocolate Chips
 Pinch of Salt

Directions:-

Preheat oven to 350 degrees. Grease a muffin tin or directly put muffin paper cups.

In a large mixing bowl add mashed bananas, vanilla, milk and maple syrup.

In the same bowl combine the dry ingredients. Mix well, do not over mix.

Fold in the chocolate chips.

Scoop batter and evenly pour in a prepared muffin cups. Sprinkle some more chocolate chip on top.

Bake for 20-25 minutes (depending on the oven) or until set and the tops are slightly brown.

Allow the muffins to cool in the tray for 10 minutes then remove to cool completely.

Recipe Note:-

1 I’ve used soy milk for these muffins, you can use any milk of your choice.

2 I use oats flour for binding, you can use whole wheat flour, all-purpose flour, spelt flour.

3 I use gluten-free rolled oats for these muffins, you can oats of your choice.

4 Chocolate Chip is completely optional if you don't like to add then you can also add berries, apples, carrots, etc. or make it simple. 

5 These muffins are easy, can be stored in an airtight container in the fridge for up to a week or in the freezer for up to 1 months.
