Blackberry Oatmeal Crumble Bars

These Blackberry Oatmeal Crumble Bars are so easy to make, gluten-free, plant-based, healthy and vegan. Most importantly you can’t beat the fruity flavor of blackberries in these bars. These oatmeal crumble bars use the same mixture for the crust and for topping. It’s a perfect dessert or a snack for summers.

I love to make simple, quick grab and go snacks, especially in summers. You just need to pack them up and take them along with you. It took only 30 minutes and required only a handful of wholesome ingredients. The texture of these bars is chewy, crumbly with a punch of blackberry.

When it comes to the recipe, it’s super easy. Start by making the oatmeal mixture take a bowl to add rolled oats, oats flour, maple syrup, a pinch of salt, baking powder and cinnamon. Mix until it gets crumbs. Set aside a cup of the mixture which you will use for topping. I already mentioned that the crust and toppings are of the same mixture. Now press down the crust into the baking tin.

When it comes to blackberry mixture! You just need to mash the berries with a fork as we do to mash bananas. Then add maple syrup and some chia seeds into the mixture and mix well. There you go you’re filling it ready. I told you it’s a very easy recipe!

Now spread the berry filling on top of the crust and sprinkle the remaining oatmeal mixture on top of it. Put it in the oven for 30 minutes or so. Cool completely before cutting into pieces. Your baked oatmeal crumble bars are ready to eat.

These bars are perfect for dessert, snack, or even for breakfast as well.  They have oats and blackberries that make the bars perfect breakfast food. Right?

Ingredients:-

Oatmeal Crust and topping
 2 ½ cups Rolled Oats (make sure they're certified gluten-free, if needed)
 ¾ cup Oats Flour
 ½ cup Maple Syrup
 Pinch of Salt
 Sprinkle some water, if needed
Blackberry Filling
 1 ½ cups Fresh Blackberries
 2 tbsp Maple Syrup (optional)
 2 tsp Chia Seeds (optional)

Directions:-

Blackberry Filling

In a large mixing bowl, roughly mash berries with a fork or potato masher. Stir in maple syrup and chia seeds. Set aside to gel while preparing the crust.

Oatmeal Crust

Preheat oven at 350 F or 180 C. Line baking tin with parchment paper or grease lightly to keep the crust from sticking and set aside.

Take a mixing bowl, add all the crust ingredients and mix well until it gets crumbs. Sprinkle some water if required.

Set aside a ¾ cup of mixture for topping. Press the remaining crust firmly into the bottom of the baking tin.

Spread berry filling evenly across crust and top with reserved oatmeal crumbs. Sprinkle across berry filling.

Bake for 30 minutes, or until crust and top is lightly golden and filling has thickened.

Let cool completely before cutting into bars. Makes 12 bars, depending on how you cut them.

Recipe Note:-

1 Line your baking tin with parchment paper or wax paper for easy removal.

2 Can also substitute fresh blackberries with the berry of your choice or mix up the berries as per your taste. Frozen berries also work fine.

3 Instead of maple syrup, you can use other liquid sweeteners as well like honey, rice syrup, agave, etc.

4 Cool completely before cutting into pieces.

5 Store in the refrigerator for up to one week or freeze them for longer.
