Chocolate Almond Cookies

It’s been a while since I shopped the cookie. It doesn’t mean that I don’t eat cookies in my home.  My mother uses to make cookies and I always look forward to eating them right out of the oven. Actually, my mother introduced me to the art of baking goodies. Usually, I make cookies on weekends so that I can carry it a whole week for snacking. Today I am sharing the magical recipe of these Chocolate Almond Cookies.

These Chocolate almond cookies are quite a mouthful, smaller in shape and a little bit thicker. They get easily melt in your mouth. These cookies have melted chocolate in them which adds a rich flavor to it. These chocolate almond cookies are among my top favorites… and I am sure once you give a try to it they’ll be in your list, too.

What you all don’t know that these Baked Chocolate Almond Cookies are Vegan, Gluten-Free, Dairy-Free, and surprisingly Low Carb and low in sugar. If you’re like gluten-free or on a gluten-free diet, then give a try to these cookies I am sure that you won’t get disappointed. If you’re dairy-free or eating low carb, I think these will also get fits in your diet. I love making this low carb, gluten-free cookies recipe because they are so quick easy and healthy. The batter comes together in no time, and they bake up in only just 12 mins.

For these cookies, I use Homemade Almond Flour because almond flour viewed as a natural ingredient that is low in carb. It is a low-carb flour for everyone who following a ketogenic diet (and we use it quite a lot in our recipes) which makes it one of the best keto flour alternatives.

The dough can be easily mixed together with hands in case if you don’t have a food processor. It takes just a couple of minutes to prepare the dough which guarantees you tender, crisp cookies.

Ingredients :-

 1 ½ cups Almond Flour
  cup Cocoa Powder
 ¼ tsp Cardamom Powder (Optional)
 ¼ tsp Cinnamon Powder
 Pinch of Salt
 ½ tsp Baking Soda
 ½ cup Maple Syrup/ honey
  cup Melted Chocolate
 ½ cup Almond Butter
 1 tsp Vanilla Extract/ Almond Extract
 Chopped Almonds

Directions :-

Pre-heat oven to 350 F /180 C.

In a medium bowl, whisk all dry ingredients (almond flour, cinnamon, baking soda, cardamom, cocoa powder and salt). Set aside.

In a large bowl add maple syrup, almond butter, vanilla extract, melted chocolate & stir well.

Add the dry ingredients to the wet ingredients and mix to combine.

Roll balls with your hands and press them down on a baking sheet lined with parchment paper and add some chopped almond (optional).

Bake 10-12 minutes until the tops of the cookies begin to slightly brown. Let them cool completely on a baking tray before handling (do not transfer it to cooling rack). The cookies are VERY SOFT when straight out of the oven but firm up as they cool down.

Recipe note:-

1  Please make sure you use a finely ground blanched almond flour rather than an almond meal.

2 In case if you don’t find almond butter available than you can use unsalted butter or coconut oil as a substitute. I suggest you prefer coconut oil over unsalted butter because it’s healthy.

3 Make sure to keep an eye on cookies while they are in the oven because it bakes very quickly and gets burnt.
