Creamy Coconut Milk Rice Pudding

Hey!! I am back with an amazing and delicious recipe taught by my mother Creamy Coconut Milk Rice Pudding. I made this amazing pudding yesterday and it turns out so delicious, yummy and creamy so I couldn’t resist myself to share a recipe with you all.

This is my all-time favorite pudding. Basically, it is an Indian version of rice pudding (kheer) made with coconut milk instead of regular whole milk. In India rice pudding known as Kheer. It is a very popular homemade dessert and required only a few ingredients. While growing up my mom always made this rice pudding (Kheer) whenever we all have craving for something sweet. It is a treat for all family members. So rich and creamy, I know your family will definitely gonna love this as much as mine does!

Especially Creamy Coconut Milk Rice Pudding or Mango Chia Seed Pudding recipe is completely vegan, plant-based and no refined sugar added in it. This is an awesome recipe to have in breakfast, or as a dessert or you can also prefer it for your beloved family or friends get together.

Rice Pudding is so easy to make simply you need to put all the ingredients into the pot, stir it quite a couple of times until it turns out as a perfectly thick and creamy and there you go.  I have also added natural extract of vanilla and pinch of cardamom powder in this for adding the flavor.  Usually, I like to experiment with the ingredients all the time to make the best out of it. Just follow the basic recipe of rice pudding and then play with ingredients like add the raisins, nuts, or serve with fruits, etc.

Can I make rice pudding with cooked rice?

Definitely, but you will need to go through my another recipe for that version. I will soon be uploading another post for cooked rice pudding probably by end of May 2019. The current recipe is made from scratch and is so creamy and yummy than already cooked rice pudding. In fact, when the rice is being cooked together in milk it adds more flavor, aroma, and texture to the pudding.

 

This is my absolutely favorite Creamy Coconut Milk Rice Pudding, in my opinion, it’s very easy, creamy and most delicious rice pudding you can make!

Creamy Coconut Milk Rice Pudding

Ingredients:-

 1 Canned Coconut Milk
 ½ cup Water
 ½ cup Uncooked Rice
 ½ tsp Clarified Butter (Ghee)
 ½ tsp Cardamom Powder
 Pinch of Saffron
 1 tbsp Maple Syrup or any other sweetener
 1 tsp Vanilla Extract
Toppings
 Diced Strawberry
 Diced Apple
 Pomegranate
 Golden Raisins

Directions:-

In a medium saucepan add ½ tsp clarified butter (ghee), rice and place on medium heat and stir for about 2-3 minutes.
(This step is optional, but I recommend not to skip this step. Trust me it adds more flavor to your pudding).

Now remove the rice in a bowl and keep it aside.

In the same saucepan add coconut milk, water and bring it to a low boil over medium heat and stir to prevent burning.

Add rice, cardamom, saffron to milk and cook for about 20-25 minutes until the rice gets soft and thickened. Stir occasionally in between to prevent sticking at the bottom.

Then remove from the heat, add maple syrup and vanilla extract. Stir Well

Serve hot or cold with fruits or nuts. Enjoy!

Recipe Note for Creamy Coconut Milk Rice Pudding:-

1 Adjust the quantity of milk as per your taste or consistency you like. You can also add little water to the milk.

2 You can use any kind of rice for this recipe I am using long grain rice. But I love to use medium-grain rice too because of the texture of pudding.

3 You can use any milk like full-fat milk, half n half cream, any other plant-based milk instead of coconut milk. I am using canned coconut milk you can use homemade coconut milk also.

4 For this recipe, I am using maple syrup to sweeten the pudding. But you can use any other sweetener as per your taste like regular sugar, honey, agave, coconut sugar, brown sugar, etc.

5 Add any toppings, raisins, and nuts of your choice or you can have the pudding itself. It also tastes delicious.

6 Store this pudding into the fridge for up to 2-3 days. Pudding gets more thickened into the fridge. Only you need to add milk before you serve the pudding.
