I always make these pancakes according to our taste and mood, we like to enjoy pancakes which are fluffy and a little bit sweet. Most of the time I like to have pancakes with fresh fruits and maple syrup. It becomes a complete wholesome breakfast and keeps you full for longer.

As I mentioned before this pancake recipe is –

How to make delicious Vegan Pancakes without eggs?

This pancake recipe is almost the same as the classic recipe. You only need a bowl, flour, baking powder, salt, maple syrup or sugar and any plant-based milk. Mix everything in bowl pour batter on a non-stick pan cook from both the side and here you go… your fluffy vegan pancakes are ready to serve.

As a replacement of eggs, I am using baking powder, it does a great job.

How to make Vegan Pancakes fluffy?

To make eggless pancakes, baking powder is the key ingredient. It helps to raise the batter which makes pancakes fluffy, light and also gives proper texture. I suggest leaving batter at least for 5-10 minutes before making pancakes.

Can I freeze pancakes?

Yes, you can freeze them in a ziplock bag. Let them cool completely before freezing them. Reheat in a microwave or on a pan before serving.

Light & Fluffy Vegan Pancakes

Ingredients:-

 1 cup Whole Wheat Flour
 1 tsp Baking Powder
 Pinch of Salt
 1 tbsp Coconut Sugar/ Maple Syrup
 1 ½ tsp Vanilla Extract
 ¾ cup Soy Milk or any milk of your choice
  tsp Cardamom Powder (optional)
 Coconut oil to grease the pan/ butter

Directions:-

In a large bowl, whisk together flour, sugar, baking powder, and salt. Add milk and mix until smooth.

Place a non-stick pan over medium-low heat, and spread some coconut oil.

Use 1/4 measuring cup, pour batter into pan. Cook until when you see bubbles forming around the edges of the pancakes. Then flip and cook for another 2 to 3 minutes on the opposite side, until golden.

Immediately serve with maple syrup, drizzle chocolate sauce, and add toppings of your choice. Enjoy!!

Recipe Note:-

1 You may use any kind of non-dairy milk, such as cashew, almond, soy, hemp, oat milk or use regular skimmed, whole milk.

2 I am not adding any butter or oil in the batter if you want you can add it. May also use melted coconut oil or vegan butter.

3 Don’t flip pancakes too quickly. It will take about 2-3 minutes to cook from one side. Look for the edges to be cooked, and a few bubbles to form in the batter. Then flip and cook from another side.

4 Instead of whole wheat flour, use all-purpose flour, spelt flour, whole wheat pastry flour, oats flour.

5 Instead of coconut sugar, use any other sugar such as brown sugar, granulated sugar or any liquid sweetener.
