Mango Chia Seed Pudding

Mango Chia Seed Pudding is one of the best recipes which is super easy to make and has an amazing flavor. Not to mention, with endless topping possibilities, you can give it a personalized touch. You can enjoy this pudding in your breakfast or snack. It even goes well as a dessert to keep you satisfied and energized.

Actually, I am so much in love of having smoothies like Mixed Berries and Banana Smoothie, Orange Mango Smoothie, Chocolate Peanut Butter Smoothie, etc. in my everyday breakfast. Now, this spring I thought to try puddings. My Creamy Coconut Milk Rice Pudding and this Mango Chia Seed Pudding become my absolute favorite. Honestly, I never tried pudding chia seeds, perhaps because I don’t like their texture. But I was totally wrong, Mango Chia Seed Pudding I made this morning was so delicious that I am definitely going to add chia seed puddings in my breakfast list.

This Mango Chia Seed Pudding is made with your choice of almond milk, chia seeds, fresh mango, greek yogurt, and sweetener. All of these together make it one of the healthy fat-loaded snacks or breakfasts!

Therefore start with two mason jars or in any jar add some chia seeds, almond milk (or any milk of your choice), natural vanilla extract and sweetener into the jar. Mix it well until all the chia seeds get mixed evenly in the milk and then refrigerate for 2 to 3 hours. I recommend that you make it the night before you want to eat and let it sit in the fridge overnight.

Important Tip

Adding chia seeds and milk correct ratio is one of the most important steps to make any chia seed pudding. Usually, for a single serving, I take 3 tablespoons of chia seeds with 1 cup of milk. In fact, Chia seeds can absorb liquid 2 to 3 times of their own weight. 6 Tablespoons of chia seeds with a double batch of 2 cups of milk. However, the measurements can be played around depending on the serving size or the consistency as your preference.

Chia seed pudding is an awesome meal-prep option. Make a batch on weekend to have in the refrigerator for a quick breakfast, healthy snack or dessert. The beauty of chia seeds is that they are packed with essential nutrients it’s loaded with a high amount of fiber, protein, and healthy fats, low in sugar and super filling. In fact, this Mango Chia Seed Pudding is Vegan, gluten-free, paleo and keto-friendly.

How to Serve Chia Seed Pudding:

I would like to share that my favorite way to eat chia pudding is along with fresh cut seasonal fruits. You can use any available fresh fruits you have on hand or seasonal fruits like oranges, kiwi, raspberries, blueberries, blackberries or grapes. You can also go with strawberries, pineapple, mango, banana, apples, peaches, granola, nuts, seeds, etc. Believe me, you can do endless variations and experiments with this chia seed pudding.

Ingredients :-

 6 tbsp Chia Seeds
 2 cups Unsweetned Almond Milk or milk of choice
 ½ tsp Honey or other sweetener (optional)
 ½ tsp Vanilla Extract
 2 Fresh Mangoes
 2 tbsp Greek Yogurt
 1 cup Mango Smoothie (Optional)

Directions :-

In a bowl or Mason jar, mix together chia seeds, milk, honey and vanilla mix it well.

Once the chia pudding mixture is well combined, let it sit for 5 minutes, give it another stir to break any clumps of chia seeds, cover and put the mixture in the fridge to set-up for 2-3 hours or overnight.

I recommend to prepare your pudding the night before and let it sit in the fridge overnight. When ready to serve, divide the mixture between two glasses, along with fresh mangoes and top the pudding with some more mangoes and some yogurt and enjoy.

2 Store the chia seed pudding in a Mason jar or Tupperware for up to 1 week in the fridge.
