Orange Coconut Macaroons (Vegan & Gluten Free)

I love eating desserts, but generally, they are not good for health because they are full of refined sucre, dairy products. So, I decided to cook & eat a healthy balanced version of desserts in this new week. You don’t have to prohibit yourself from eating desserts if you eat healthy desserts. I love baking but I’m always looking for healthy recipes to try. Orange Coconut Macaroons is one of the easiest Vegan, Gluten-Free & Lactose-free cookies I’ve ever made. These Orange Coconut Macaroons are chewy and tender from within, crunchy and golden from the outside. When drizzled with chocolate glaze, they taste more yummy.

 

It’s easy to cook, looks jovial and one of my super quick desserts. These macaroons are more like cookies, as not only cocoa are dewatered but also almonds grounded. The taste and aroma of orange and cardamom is yet another key ingredient which differentiates these vegan cocoa macaroons. This recipe is made with no eggs, no processed sugar, no junk you do not want and totally vegan. Actually, they taste much better than the junks ones. I’ve used honey to sweeten these macaroons, but you can use any of liquid sweeteners as per your wish and preference.

Coconut-Orange-Macaroons

Recipe :-

Ingredients :-

 1 ¼ cups Unsweetened Small Coconut Shreds
 ½ cup Finely Ground, Blanched Almond Flour
 1 tbsp Peanut Butter
 ½ tsp Orange Zest
 1 ½ tbsp Fresh Orange Juice
 ¼ cup Honey
 ½ tsp Cardamom powder
Chocolate Glaze
 ½ cup Dark Vegan Chocolate
 1 tsp Coconut Oil/ Vegan Unsalted Butter

Directions :-

Preheat the oven to 350°F / 180°C. Line a baking sheet with parchment paper or greased foil. Set aside.

Add all Orange Coconut Macaroon ingredients (coconut, almond flour, peanut butter, honey, orange juice and orange zest, cardamom powder) to a food processor or in a bowl.

Blend or mix just until you get a sticky mixture, fold into dough until well mixed.

Using a cookie scoop, scoop firmly packed balls of coconut mixture. Drop onto the prepared baking sheet, making sure to space balls evenly apart.

Bake for 15-18 mins, until golden around the edges and slightly golden on top. Mine took 18 mins. Place baking sheet on a cooling rack. Allow to cool on baking sheet for 30 mins.

Drizzle macaroons with chocolate glaze (Optional), Enjoy! Storing instructions below.

In a double boiler, melt the chocolate and coconut oil/butter together over low-medium heat, stirring frequently until smooth.

Drizzle the chocolate on top.

Recipe Notes:-

1. In this recipe I have used gluten free coconut flakes, it is important and necessary to use small coconut flakes about the sprinkles size in this recipe because the larger flakes will result in loosely coupled and cookies.

2. Whereas these macaroons may not be as fluffy as traditional macaroons (because of the lack of eggs), the taste is on spot and I prefer the rather dense texture in fact.

3. Keep macaroons for up to one week in an airtight container in the fridge. In this way, they will easily last and remains fresh.
