Going for a day trip this week, and this kind of trips are for fun, lots of snacks and food. As you all might know that me and my husband are big foodies and we always need something to munch on especially when we are traveling. As being vegan is very hard to find good vegetarian food, so I always carry homemade food and snacks along with me.

I thought to make a snack which is healthy and I don’t feel guilty about eating them. First I think to make No bake Flax Peanut Butter Energy Bites then I thought of carrot cake energy bites but then I ended up by making this cookie. Peanut Butter Chocolate Chip Cookies are crispy and delicious. Moreover, it is a perfect snack for outings, gatherings, mid-day snack, easy to carry along and it satisfies your taste buds.

These Peanut Butter Chocolate Chip Cookies are truly the best cookies I had in a while. They are so delicious, crispy and melt in the mouth with a creamy peanut butter flavor with a tint of chocolate. To make this cookie you only need 7 ingredients which are easily available in grocery stores. These goodies become one of my favorites, but I am still in love with my crunchy Chocolate Almond Cookies which I made before.

How to make Homemade Oats Flour?

Homemade Oats Flour is very easy to make and inexpensive. We all have oats in our pantry, simply you need oats and a food processor or high power blender to make oats flour.

Place oats into the food processor or blender. Grind the oats until they become into a powder form. Stop and stir in between it takes only a few seconds and your homemade oats flour is ready. Store unused portion in an airtight container.

Roughly 1 cup of rolled oats will yield approximately 1 cup of oats flour.

Ingredients:-

 1 tbsp Flax Seeds Powder + 2 tbsp Water
 1 cup Oats Flour
 ¾ cup Unsweetened Peanut Butter
 ½ cup Brown Sugar
 2 tsp Vanilla Extract
 ½ cup Chocolate chips
 Pinch of Salt

Directions:-

To make Flax egg add 1 tbsp of flaxseed powder with 2 tbsp of water mix well and set aside for 10 minutes.

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

In a mixing bowl add peanut butter, brown sugar, vanilla extract mix until the sugar gets dissolved.

Add flax eggs to the mixture and mix well.

In the same bowl add oats flour, baking soda and a pinch of salt. Mix in with the help of a spatula.

Add chocolate chips to the cookie dough and cover the bowl with cling wrap or kitchen towel and refrigerate for 30 mins.

Scoop the dough equally and place them on a prepared baking sheet and gently flatten it. (Keep space in between each)

Bake on the center rack of the oven for about 15 minutes (time may vary depending on oven) or until light brown around the edges. Do not overbake keep eye on the cookies.

Let it cool completely on the baking sheet before putting into a cookie jar. Happy Baking!!

Recipe note:-

1 Baking time may vary because very oven is different. When cookies are golden brown from edges it’s time to remove them from the oven. Always keep eye on cookies.

2 Use any flour like whole wheat flour, homemade almond flour, coconut flour, all-purpose flour instead of oats flour.

3 Use any butter like cashew butter, almond butter instead of peanut butter. If you are allergic to nuts then you can also use a ½ cup of unsalted vegan butter.

4 I want to make this cookies gluten free so I use gluten-free oats to make oats flour. You can use any other oats of your choice.

5 If you don’t have brown sugar, use regular white sugar, canned sugar, coconut sugar or you can also other liquid sweeteners as well.

6 Flax eggs are a replacement of eggs. If you don’t want to can skip that step.
