Stir Fry Veggie Noodles (Hakka Noodles)

One pot Stir Fry Veggie Noodles with flavourful sauce this easy stir fry noodles recipe is a perfect mid-week dinner and can be customized as well according to your preference. It is also known as Vegetable Hakka Noodles and it is one of the most common street food in India.

This recipe of noodles is also fantastic for your children. It is vegan, healthy, plant-based and packed with nutrients. You can have a very easy and versatile dinner on a table. Mixing together,  all it takes is just 25 minutes and you go there … your fresh and delicious dinner is ready.

Before you start cooking, start by preparing all the ingredients. Place a pot filled with water on heat and add then add noodles. In the meantime, cut and chop all the veggies you’ve got in your fridge (slice the veggies into thin julienne). Drain the cooked noodles, run them under cold water, toss them with little oil to keep them away from sticking.

It is important to add the ingredients as per their cooking time while making any stir fries. Heat over high heat a skillet or cast iron pan and add a little olive oil, garlic, followed by onions. Then add carrots, add the rest of the vegetables such as cabbage and peppers, etc. and sauté once they are half cooked. In addition, make sure the veggies don’t get overcooked and keep them crunchy.

Now add all the sauces, noodles, salt, and black pepper. Garnish with some fresh cut sprint onions. Delicious Stir Fry Noodles ready for dinner. Use any of the noodles you prefer. Make sure that you are cooking the noodles in the suggested way for better taste.

Ingredients :-

 Whole Wheat Noodle/ any other noodles of your choice
 Water
 1 tbsp Olive Oil
 3 Chopped Garlic
 ½ cup Julienne Carrots
 ½ cup Julienne Capsicum
 ½ cup Julienne Cabbage
 ½ cup Spring Onions
 2 tsp Red Chili Sauce
 2 tsp Soy Sauce
 1 tsp White Vinegar
 ½ tsp Salt
 ½ tsp Black Pepper Powder

Directions :-

Place a pot of water for boiling then add noodles and cook just until soft or broken up. Drain and rinse with cold water to stop the cooking process.

Place a large frying pan or wok on the stove over high heat. Add 1 tablespoon of olive oil or any other cooking oil, along with garlic, onions and sauté them.

Now add carrots, bell pepper, and cabbage. Sauté vegetables for 2-3 minutes until slightly tender. Add green onions and sauté for 1 minute.

Add all the sauces, cooked noodles along with salt, black pepper. Quickly stir-fry on high heat for 1-2 minutes, tossing constantly, until sauce evenly coats the noodles.

Sprinkle some more green spring onions and serve immediately. (If you add extra veggies/noodles or like to add more sauce, I recommend to double the sauce quantity as per your taste)
