This easy recipe is made from only 4 ingredients. Yes! You read it right, Strawberries, Chia Seeds, Maple Syrup and Lime Juice. That’s it! No added refined sugar, no gelatin, no pectin. After all, our health is important in why to add artificial ingredients or preservatives. Farm fresh strawberries, chia seed, maple syrup, and lime juice are healthy. Simple ingredients packed with nutrition and essential vitamins. The chia seeds will help the jam achieve creating a jam-like texture while adding Fiber, Protein, and healthy Omega-3 fats, and the maple syrup brings required sweetness.
Limiting refined sugars is such a difficult job these days because almost all processed foods contain refined sugar in one or another form. Store bought jam is one of the food which I completely eliminated from my diet because it’s so high in refined sugar.

Can I use any other type of sweetener?
You can definitely go with agave (mainly because almost all of the sugar in it is fructose), brown rice syrup or honey for a healthier version, otherwise, go with regular sugar.
Can I use any other fruit instead of strawberries?
Another berry type (blueberry, blackberry, raspberry, and cranberry) or peaches/apricot should go well. But you probably need to increase the amount of sweetener according to your taste.

500gFarm Fresh Strawberries (washed and chopped)
⅓cupMaple Syrup/ Honey
1tbspFresh Lime Juice
Heat a medium size saucepan over medium heat and then add the strawberries.
As the strawberries begin to get soften over the heat, stir them gently around in their juices.
Now add the maple syrup and lime juice to the strawberries, stir well.
Once the berries have softened, let the mixture come to slow boil.
Now add chia seeds stirring the mixture continuously for about 10 minutes and then turn off the heat.
Use a potato masher to break them up even more.
Let the jam cool to room temperature, then pour into the jar and store in fridge.
Recipe Note :-
1 If you like small chunks of strawberries in it, then you're done! Simply pour the mixture into a jar and cover it tightly with a lid.
2 If you'd prefer jam with fine and smooth texture, then add the mixture to your blender and blend it for couple of seconds before pouring it into a jar.
3 While the jam is still hot it may seem more fluid that you would expect. The chia seeds need a bit of time to do their work, so let the jam cool to room temperature in the jar and then put your jar of jam in the fridge and it will gain the perfect texture.
4 You can store this jam in refrigerator for almost a month. Since it doesn't contain any preservatives and hasn't undergone the proper canning process it must be always kept refrigerated.
5 This jam can be canned, but please follow proper canning instructions to ensure food safety.
