Zucchini Carrot Fritters (Pancakes)

Here’s a quick and easy Zucchini Carrot Fritter (Pancakes) recipe that’s perfect for an appetizer, snack or you can have them in lunch as well. Zucchini Carrot Fritters (pancakes) are one of the best healthy options to include in your diet/meal. Moreover, they are deliciously crisp from outside and tender from the inside. These Zucchini Fritters take just 20 mins to prepare with simple ingredients.

To prepare Zucchini Carrot Fritters (pancakes) you need to combine shredded zucchini, carrots, chickpea flour, some spices, and freshly chopped coriander. It’s so delicious that you can directly eat them, or serve with any kind of dip you like. These fritters are Vegan, Low Calorie and Gluten Free, and a perfect way to add some veggies to your meal.

Recipe Notes:

  • Make sure to use a non-stick pan, otherwise, fritters will stick to the pan and you need more oil for frying.
  • Make sure the batter consistency is perfect. Not too thick and not too runny. If a batter is runny fritters get soggy from inside. If a batter is too thick, then sprinkle some water.
  • For more crispy fritters you can also add Parmesan cheese.
  • Place a batch of cooked and cooled zucchini carrot fritters into a ziplock bag and place them into a refrigerator for up to 2-3 days and reheat them before serving.
  • Reheat the fritters in an oven at 250 C for 5 mins. Or pan fry with some olive oil to crisp them again.

Ingredients :-

 1 Grated Zucchini
 1 Grated Carrot
 1 tsp salt
 ½ tsp Crushed Black Pepper
 ½ tsp Turmeric
 ½ tsp Cumin Powder
 1 tsp Red Chili Powder/ Paprika
 ½ cup Chickpea Flour / Besan
 ½ tsp Garlic Paste
 ½ tsp Ginger Paste
 ½ tsp Onion Powder
 ½ cup Freshly Chopped Cilantro / Coriander
 1 tsp Finely Chopped Green Chili
 ½ tsp Carom Seeds (Ajwain)

Directions :-

Grate zucchini and carrot in a bowl, add little salt and set aside for 5 mins.

Use cheese cloth or dish towel to squeeze all water using your hands.

In a bowl add grated zucchini and carrot, chickpea flour (besan), ginger garlic paste, freshly chopped coriander, and all the spices. Mix well. (sprinkle some water if required)

Heat olive oil in a non-stick pan over medium to high heat.

Scoop tablespoon of batter and press it with hands and give a shape of fritter, and cook until it turns golden brown from both side.

6 Serve hot with your favorite dip or eat plain. Enjoy!!!
